Coconut Clusters
The best Coconut Clusters you will ever eat.
Equipment
- Measuring Cups
- Bowls
- Cooking Gloves
Ingredients
Wet Ingredients
- 1 tbsp Honey
- 1 tbsp Brown Rice Syrup
- 3 tbsp Coconut Butter melt in microwave for about 30 seconds
Dry Ingredients
- 1 cup Coconut Shavings
- 1/2 cup Mix nuts, seeds, etc… Pecans, Almonds, Pepitas, Chia Seeds (whatever you like).
- 1 tsp Raw Cane Sugar
- 1 tsp Erythritol
- 1 tsp Inulin
Instructions
Dry Ingredients
- Preheat the oven to 325°. Preferably in a convection oven.
- Combine all dry ingredients in a medium to large bowl.
Wet Ingedients
- Melt the coconut butter so it just turns to a liquid, don't burn. 30 Seconds in the microwave is usually enough, but this could be more or less depending on the unit.
- Pour all of the ingredients on top of the Dry ingredients and use your hand to get everything very evenly coated. Food gloves make this much easier and less messy!
Clusters
- Divide the mixture into about 8-10 equal size clusters and smush the ingredients together into a shape that semi-resembles the pictures. There's no prize for artistic form on this one, we'll settle for "kind of holding together".
- Place each cluster onto a greased cookie sheet, or use one of the silicone baking mats like I have in my picture, those work great!
Bake
- Bake for 14 minutes, or until lightly golden brown. Don't overbake!
- Allow these to cool for about 5 minutes before eating, or until they are able to hold their shape without falling apart.
